The two main forces—chefs Jon Shook and Vinny Dotolo—driving Animal are known collectively as the Food Dudes, so you can imagine the vibe: stripped-down interior, relaxed clientele, playful (but secretly purposeful) food, and lots of wine. Animal loves, loves, loves pork; it even shows up on the dessert menu in the chocolate crunch bacon bar. Ribs are balsamic-glazed and offered as an appetizer—you know, to whet the appetite. Of course, the kitchen offers pork-less items, but then you’d be missing the whole point.
